Six Dogs Blue embodies the freshness of a classic dry gin with the addition of two infusions that, when combined, were previously unknown in the world of gin: the blue pea flower which provides an earthy ‘cut-grass’ layer as well as the gin’s naturally blue hue; and rose pelargonium which gives our gin its refreshing lightness and slightly floral character. Fun fact: The blue pea flower reflects the pH (acidity or alkalinity) of the mix and, as tonic is more acidic, the colour will change to a light pink when it’s added to the gin.

For a dramatic twist, add a blue violet flower, or even a bright orange nasturtium flower, both of which are edible. When the gin is poured, it is hard not to be impressed by that pale blue turquoise colour in the glass. All of these cocktails tasted okay, but I found the intensity of the florals distracted me and lessened my enjoyment.This turns it a beautiful inky-blue colour but barely alters its taste from our classic London Dry gin. It is bottled at 47 % alcohol by volume ensuring a more concentrated flavour than more traditional spirits which are bottled at 40 % alcohol by volume. Made with carefully selected botanicals including forget-me-nots, Scottish heather, sage and kaffir lime leaves, this well rounded gin should be served with a premium tonic and garnished with lemon or lime to accentuate the spicy, floral and sweet notes.

The more familiar gin aromas of earthy juniper, spicy cardamom, lemon peel and orange citrus lie somewhat behind that floral intensity. When mingled with a fine tonic, the gin undergoes a wondrous transformation, blushing into a delicate pink hue. I want to note that the sample bottle I was given for this review was the older bottle style (see below). A long held ambition to launch their own gin, Shirley and Duncan Morrison purchased a small thirty litre still and began testing and developing recipes using various botanicals, slowly fine tuning what would eventually become their signature Scottish Gin expression. Juniper, clove, cinnamon and other botanicals are macerated for weeks into three times distilled grain alcohol and subsequently distilled in XIX century copper stills.

There is also a light astringency in the air above the glass stemming from the higher than normal alcohol content, and this sharpness combined with the intense floral characteristic of the gin seems to be serving as a warning that the Blue Gin just might be a little more intense and flavourful than I had expected… even for a 47 % abv.
